Da Milch ein Produkt von großer Bedeutung für die Ernährung ist, werden Qualität und Lebensmittelsicherheit von Milch von der Weltbevölkerung immer mehr gefordert. Angesichts dessen ist es sowohl für die Industrie als auch für die Produzenten unerlässlich, zunehmend ein qualitativ hochwertiges Produkt herzustellen, das den durch die geltende Gesetzgebung festgelegten Grenzwerten entspricht. In dieser Arbeit wurde eine Untersuchung der Milchqualität in der Region Missões im Bundesstaat Rio Grande do Sul unter verschiedenen Gesichtspunkten durchgeführt. Es wird jedoch empfohlen, während des gesamten Melkprozesses strenge Hygienemaßnahmen anzuwenden, um sicherere Milch von höherer Qualität zu erhalten.
