Der Johannisbrotbaum (Ceratonia siliqua) ist ein vielseitig verwendbarer Baum aus dem Mittelmeerraum, dessen Verwertung einen erheblichen wirtschaftlichen Einfluss hat. Seine Schoten werden in verschiedenen Sektoren genutzt, insbesondere in der Lebensmittel-, Pharma- und Kosmetikindustrie.Auf wirtschaftlicher Ebene wird durch die Verarbeitung von Johannisbrot eine hohe Wertschöpfung erzielt. Johannisbrotkernmehl wird als Kakaoersatz und natürliches Verdickungsmittel verwendet, während das aus den Samen gewonnene Johannisbrotkernmehl in der Lebensmittelindustrie (E410) wegen seiner texturierenden Eigenschaften geschätzt wird.
